Making lalaggia or tiganides, as they call them in Mani, is a long- held tradition and very popular with almost every Mani household. Lalaggia are, in fact, crispy strips of dough fried in extra virgin olive oil. They can be eaten plain or with a salty cheese and can be kept out of the fridge for days.
